Ingredients

  • 2 ½ cups vanilla ice cream
  • 8 ounces crushed pineapple in pineapple juice, undrained
  • ¼ cup coconut milk
  • ¼ cup Cream of Coconut, plus two additional tablespoons for the rim
  • ¼ cup rum (optional)
  • Shredded sweetened coconut flakes
  • Whipped cream and maraschino cherries

Instructions

  • Prepare the rim of your glasses by dipping them in Cream of Coconut and then into the shredded coconut flakes. Set aside.
  • In a blender, combine the vanilla ice cream, crushed pineapple (with juice), coconut milk, and ¼ cup of Cream of Coconut. Blend until smooth.
  • If using rum, add it to the blender and blend again until fully incorporated.
  • Pour the milkshake into the prepared glasses.
  • Top each milkshake with a dollop of whipped cream and a maraschino cherry.
  • Serve immediately and enjoy!

Notes

  • For a non-alcoholic version, simply omit the rum.
  • You can adjust the amount of coconut milk and Cream of Coconut to achieve your desired consistency and flavor.
