  • 2 ounces smoked Gouda cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • ¼ cup chopped fresh parsley
  • ⅛ teaspoon ground black pepper
  • 2 (2 1/4 inch thick) center-cut, bone-in pork chops
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine shredded Gouda, crumbled bacon, chopped parsley, and ⅛ teaspoon black pepper.
  • Slice a pocket into each pork chop, being careful not to cut through to the other side.
  • Stuff each pocket with the cheese and bacon mixture.
  • Rub each pork chop with olive oil, and season with salt and remaining pepper.
  • Heat an oven-safe skillet over medium-high heat and sear pork chops for 3-4 minutes on each side.
  • Transfer skillet to preheated oven and bake for 20-25 minutes, or until pork chops reach an internal temperature of 145°F (63°C).
  • Let pork chops rest for 5 minutes before serving.
