  • 4 bone-in pork chops
  • 6 medium potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 tsp dried thyme

Instructions

  • Preheat oven to 375°F (190°C).
  • Season pork chops with salt, pepper, and paprika.
  • In a skillet, sear pork chops over medium heat for 3-4 minutes per side until browned. Remove and set aside.
  • In the same skillet, melt butter and sauté onions and garlic until soft.
  • Stir in flour, cooking for 1 minute, then gradually whisk in milk, stirring until the sauce thickens.
  • Add cheese, stirring until melted.
  • Layer half the sliced potatoes in a greased baking dish, followed by half the sauce. Repeat with remaining potatoes and sauce.
  • Place seared pork chops on top and sprinkle with thyme.
  • Cover with foil and bake for 45 minutes. Uncover and bake for an additional 15 minutes until the potatoes are tender and the pork chops are fully cooked.
  • Let rest for a few minutes before serving.

Notes

  • For extra richness, add 1/4 cup heavy cream to the cheese sauce.
  • Use bone-in pork chops for more flavor, but boneless works well too.
  • Top with parsley or chives for added freshness.
