2 bell peppers (cut into strips)
1 yellow onion (cut into ½ inch slices)
1 tablespoon olive oil
1 teaspoon table salt
Black pepper to taste
6 Italian sausage links (hot and/or sweet, about 1 pound)
6 hoagie rolls
1 ½ cups mozzarella cheese
Chopped parsley (for garnish, optional)
Instructions
Heat olive oil in a large skillet over medium heat. Add bell peppers and onions, seasoning with salt and black pepper. Cook until softened, about 8-10 minutes.
In a separate pan, cook the Italian sausage links over medium heat until browned and cooked through, about 10-12 minutes.
Preheat the oven to 350°F (175°C).
Slice the hoagie rolls and place a sausage link in each roll.
Top with cooked peppers and onions, then sprinkle mozzarella cheese over the top.
Place the sandwiches on a baking sheet and bake in the preheated oven until the cheese is melted and bubbly, about 5-7 minutes.
Garnish with chopped parsley if desired and serve immediately.
