Slow Cooker Cheesy Potatoes are an easy, hands-off recipe featuring tender potatoes smothered in a creamy, cheesy sauce. This crowd-pleasing side dish is perfect for potlucks, family gatherings, or holidays. Just set it and forget it!

  • 2 lbs frozen diced hash brown potatoes
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup diced onion
  • 1/4 cup butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped green onions or parsley (optional, for garnish)

Instructions

  • Spray the slow cooker with non-stick cooking spray.
  • In a large bowl, combine sour cream, cream of chicken soup, melted butter, garlic powder, salt, and pepper. Mix well.
  • Stir in the diced hash brown potatoes, shredded cheddar cheese, and diced onion until evenly coated.
  • Transfer the mixture to the slow cooker and spread evenly.
  • Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the potatoes are tender and the cheese is melted.
  • Stir before serving and garnish with chopped green onions or parsley, if desired.

Notes

  • For added crunch, top with crushed potato chips or breadcrumbs during the last 30 minutes of cooking.
  • Swap cream of chicken soup for cream of mushroom for a vegetarian version.
  • This recipe can easily be doubled for larger crowds.
