  • 1 packet taco seasoning
  • 1 cup black beans (drained and rinsed)
  • 1 cup salsa
  • 2 cups shredded cheese
  • 6 small corn tortillas (cut into strips)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped cilantro
  • Sour cream and avocado (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  4. Layer half of the tortillas in a baking dish. Add half of the beef mixture, black beans, salsa, and cheese.
  5. Repeat the layers, finishing with cheese on top.
  6. Bake for 20-25 minutes, until cheese is melted and bubbly.
