This turkey lasagna recipe combines lean ground turkey with a flavorful tomato sauce, creamy ricotta, and nutritious spinach. Layered with tender lasagna sheets and a rich blend of Cheddar and Parmesan cheeses, this dish is a hearty and satisfying meal perfect for any occasion.

Ingredients

  • 500g minced/ground turkey (1 lb)
  • 1 onion
  • 1 carrot
  • 2 garlic cloves
  • 1 tin chopped tomatoes
  • 1 cup chicken stock/broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 bay leaves
  • 250g ricotta cheese
  • 1 cup frozen spinach, thawed
  • 30g butter (2 tbsp)
  • 1 tablespoon plain flour
  • 250ml milk (1 cup)
  • 1 teaspoon Dijon mustard
  • 50g grated Cheddar cheese (¼ cup)
  • 50g grated Parmesan cheese (¼ cup)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon oil
  • 8 lasagna sheets

Instructions

  • Preheat the oven and prepare a baking dish.
  • Sauté the onion, carrot, and garlic in oil until softened.
  • Add the ground turkey and cook until browned.
  • Stir in the chopped tomatoes, chicken stock, salt, pepper, and bay leaves. Simmer until thickened.
  • In a separate pan, melt the butter, stir in the flour, then gradually whisk in the milk to form a white sauce. Add Dijon mustard, and season with salt and pepper.
  • Combine the ricotta cheese with thawed spinach.
  • Assemble the lasagna by layering meat sauce, lasagna sheets, ricotta mixture, and white sauce.
  • Top with grated Cheddar and Parmesan.
  • Bake until golden and bubbling.

Notes

For best results, let the lasagna sit for a few minutes before serving to allow the layers to set.
